This is the pulled pork of Italy: traditionally made with a whole pig that has been stuffed with rosemary, sage, garlic, fennel seed, salt, pepper and slow-roasted over an open fire to perfection. Our version is made with a skin-on pork shoulder stuffed with the same ingredients and roasted in the oven for the same result: tender meat with crunchy skin. The fat melts during the roasting process leaving the finished pork juicy and tender. Serve the porchetta with a refreshing orange and fennel or hearty cannellini bean salad. This selection will make any party or family gathering a huge success!
This dish shows how well pork marries with fruit. Pork tenderloin is sautéed with fresh or dried figs, onion, port, thyme, and balsamic vinegar. Fresh sautéed or roasted green beans are a nice compliment.
Thin pork chops are seasoned in rum, chicken broth, and maple syrup, dredged in flour, and sautéed. Ginger and garlic are added to the pan and the resulting sauce is served over the chops. Serve with mashed or roasted sweet potatoes for a Southern accent.
