 Guest Chef Appearances:

 

 The Champagne Patio in Newport: 

Chef Pati D’Eliseo will be a guest chef preparing delicious entrees for patrons attending the 'Wine Walk' tour hosted by The Champagne Patio on March 2, 2012
Christina and Joseph Swafford, the owners of the wine shop, wine bar and restaurant, will be selecting a group of wines from their current wine deals for free tasting at multiple sites found within the Sea Towne Shopping Center located on Highway 101 next to Fred Meyer. The wine samples are available from approximately 5:30pm to 7:00pm, and the selected wines can be purchased later at the wine shop.
As part of the Wine Walk tour, the wine bar and restaurant will be open from 5:30pm to 9:00pm for casual dining along with cool tunes being played by the Annie Averre Trio. The wine bar offers a broad selection of Northwest and International wines for tasting by the glass or bottle.

The menu for the wine walk on February 3 was as follows:

  • Beef & Bleu Sliders with Caramelized Onions and House Salad
  • Chicken Paprikash with Buttered Noodles and House Salad
  • Shrimp Fra Diavola with House Salad
  • Assorted Cheese Plate with Grapes and Christina'a Asiago Bread

 

 North Coast Wine Society Dinner:  A 5-course dinner paired with wines from a visiting winery or hand selected by Joseph Swafford to compliment the menu.  A portion of the proceeds goes to support the Newport Symphony Orchestra.  The last wine dinner was held on December 10, 2011 and was a delicious and unique Swedish holiday buffet.  Culinary Center in Lincoln City:  

Chef Pati D’Eliseo is a regular instructor, working with Executive Chef Sharon Wiest, at the Culinary Center in Lincoln City. It is located on the fourth floor of the City Hall Complex and it sponsors a variety of culinary events throughout the year including demonstration classes hosted by professional chefs, hands-on classes conducted in the spacious professional kitchen, and special events like ‘cook-offs’ and ‘chef competitions’ that raise funds for local charities. Each chef is given a set pantry, a mystery ingredient and a time limit. Here’s the twist: we will auction off sous chef and judging positions to members of the audience.The Lincoln City version will be a benefit for the North Lincoln Hospital Foundation’s Samaritan Early Learning Center Fund. Last year the event raised over $5,000 for the center!

 Oregon Coast Community College:

Chef Pati will be teaching a 2-hour class on Italian Travel Foods on March 22, 2012 from 6-8 PM at the Central Campus in Newport in the Community Room.  Come and learn about the various foods that are available to travelers, via air, rail or auto. Three sample dishes will be demonstrated and offered for tasting.  Cost per person is $35.00.

 Sitka Center for Art and Ecology:

Chef Pati D’Eliseo was an instructor at the Sitka Center during the 2011 workshop season. She taught an Italian Regional Hands-on Pasta workshop.  Eight enthusiastic students made gnocchi alla romana, farfalle with raw tomato sauce, cheese ravioli with summer vegetables, and linguine with pesto, green beans, and potatoes.  There was plenty of food to eat and take home! 

Good news! Chef Pati has been invited back for the 2012 season to facilitate two workshops: 

  • Tapas: Small Plates from Spain 10:00 AM - 4:00 PM Thursday, July 19, 2012
  • Italian Regional Hands-on Pasta class 10:00 AM - 4:00 PM Wednesday, September 5, 2012


The Sitka Center is located in the area of Cascade Head and the center fosters creative activities around art, nature and humanity through its various workshops, presentations and individual research projects held throughout the year. Community Service:

 

 Oyster Cloyster:

Chef Pati has worked with the Oyster Cloyster Foundation to produce a 10th anniversary edition of the Oyster Cloyster cookbook,  The Oyster Cloyster is a fund raising event for the Oregon Coast Community College Aquarium Sciences Program.  The book was edited to make it more useful for the home cook; it is divided into three sections: Everyday, Special Occasion, and Adventurous with both hot and cold recipes included in each section.  Chef notes have also been added to help the reader with substitutions for hard-to-find ingredients or definitions for unfamiliar kitchen equipment.  The book is on sale for $16.00 (an online version is available for $8.00) at various locations throughout the county.  Click here for more information.  

 

 

Since our business launch, our company has supported a variety of community events and non-profit fund raisers either by actively participating directly in the event or through a business donation. Some of our activities have included working with Food Share of Lincoln County, the Oyster Cloyster, and Prostart Culinary Program at Taft High School. We've donated chef services gift certificates to several fundraisers in the county and we look forward to providing additional contributions where and when we can. We have met some very wonderful people along the way and will continue to provide support for the betterment of our community.
